Adobo will now have a standard recipe, says DTI

The OG Filipino adobo will soon have a national standard way of cooking and it made a fuss online. The DTI – Bureau of Philippine Standards (DTI-BPS) has established BPS/TC 92, the Filipino Dishes technical committee.

The committee began developing the Philippine National Standards (PNS) for adobo and referred to Kulinarya: A Guidebook to Philippine Cuisine as the main basisAfter its announcement on July 9, the Internet was quick to question the move.

 

BPS Director Neil Catajay pointed out that the standards on Filipino dishes will open doors to further a prominent food culture, and it will “help ordinary citizens, foodies, and food businesses determine and maintain the authentic Filipino adobo taste.”

The PNS draft on Philippine adobo will be rolled out nationwide once it’s available, for review and comments of concerned stakeholders.

However, BPS/TC 92 will not only focus on developing PNS for adobo, but other popular Philippine cuisines such as siniganglechon, and sisig. The committee also aims to apply variations and techniques adopted in all regions of the country.

After receiving backlash online, DTI clarified that these recipes would only be used to promote the dishes outside the country, ‘The attempt is to define what we will promote internationally and not redefining what adobo is to different people now.’

‘Nothing to worry on this,’ DTI added. ‘This is just among the many groundwork to develop more creative industry exports.’
